    Gluten Free Recipe: Chia Pudding


    Prep:10 Minutes Cook:No Cook, Refrigerate 3+ hours Makes:2 Serves


    6 Tablespoons Chia Seeds

    2 Cups Coconut Milk or Almond Milk

    ½ Teaspoon Vanilla Extract

    1 Tablespoon Honey

    Berries and Toasted Coconut Flakes, for topping


    Method:

    1. In a bowl, combine the chia seeds, milk, vanilla and honey.

    2. Half the mixture into two separate jars and place in the fridge to set. The mixture requires a minimum of 3 hours to set; I like to leave mine in the fridge overnight.

    3. Top with berries, coconut flakes, or anything else you like.
